Vallisto


VALLISTO was started in 2010 by Pancho Lavaque and Hugh Ryman, both viticulturists and winemakers. They chose to honor local population by naming their winery after the native people from Cafayate Valley: Vallisto.
This project is about finding the best vineyards to express the virtues of unique terroirs within this remote area of Argentina. Vineyards are located between 1900 and 2600 meters above sea level. Pancho, a native of Cafayate, along with his team, have been focusing on rescuing old vineyards with lesser-known grape varieties. Challenging Argentina’s traditional winemaking, this young and dynamic approach is resulting in creating elegant, terroir-driven wines with a strong sense of place.
