Chloé Bayon grew up in Nice in the south of France. Meanwhile the family domaine was waiting for her in Burgundy. Chloé took over the family estate in 2002 with her husband Guillaume Pichon, both fresh out of oenology school. They decided to revive the family estate which counts 12 hectares in the regions of Pouilly Fuisse, Macon, and Saint Veran.

Manoir du Capucin refers to the first owner of the house of the Domaine, the Capuchin monk, Luillier. The house is believed to have been built in 1602 and is one of the oldest in the village. makes feminine and delicate wines that express the typicity of their rich and unique terroir.
