Vinification
The fruit is hand-harvested, the clusters destemmed and the grapes gently pressed; the juice is fermented with selected yeasts in stainless steel vats; no malolactic fermentation. Reserve wines are held in stainless steel tanks.The wine is bottled without fining or filtering and aged sur lattes for an extended period of 3 years. The wine is disgorged and finished with a dosage of 7g/L.
