Vinification
Blend of Malbec obtained from carbonic maceration (the grappes come from old vineyard sites) and a Malbec obtained from short vinifications (the grappes come from young vineyard sites). Bottling in January with a small quantity of SO2. Native yeast fermentation, gravity fed vats.
