Vinification
Grapes are hand harvested and destemmed. The pneumatic press is filled by gravity and long pressing programs are used. After pressing the juice decant for a day, later the clear juice is transferred to the fermentation tank. Alcoholic fermentation takes about 25 days under controlled temperature conditions. After fermenting the wine was aged in steel tanks for 11 months prior bottling.
