Vinification
All three of the varieties in this wine were fermented separately so that the ideal blend could be made in the end.  All were fully destemmed and fermented for about 12 days.  During the first few days of fermentation pump overs were employed then when the cap formed they switched to punch downs.  After about 2 weeks, fermentation was over ,and wine pressed into tank for a couple of days of settling before going to neutral french oak for ageing.  The wine was racked once off of the gross lees during the summer and then racked again for bottling.
