Vinification
Native yeast fermentation, some whole clusters used but mostly de - stemmed.  During the first few days of fermentation the must is pumped over then as the cap starts to form we switch to pump overs.  Over the years we have held back barrels to build a solera and this is our first bottling of this wine.  The oldest wine in the mix is from 2013 and the youngest is 2021.  All of the vineyards are located in Santa Barbara County with a majority of them coming from the Santa Ynez Valley AVA.
