Vinification
Native yeast, fermented in concrete vessels, punch downs (twice a day, later once a day), if needed the wines is "aired" by splashing the wine back into the tank, pressed in a big basket press, only taking the juice the grapes want to give, aged in a concrete tank of 3000L. Natural malolactic fermentation.
