Vinification
Hand-harvested fruit, whole-cluster direct pressing, and native yeast fermentation. No sulfites added during élevage. Spontaneous malolactic fermentation in stainless steel, followed by 6 months of lees ageing.

Lightly filtered before bottling, with a minimal addition of sulfites under inert gas.
