PEP is a Trepat sourced from more than 80 years old vines of Vinya de la Rovina in Conca de Barberà. The wine pays tribute to Josep Maria Foraster Civit, affectionately known as “Pep”, founder of the estate, while also honoring the youngest Pep in the family.
Crafted as the estate’s most exclusive expression, PEP showcases the pure typicity of Trepat: fresh, vibrant, and elegant, with layered aromas of red berries, delicate spice, and Mediterranean herbs. Energetic and complex, the palate combines finesse, freshness, and remarkable depth.

Vinification
The grapes are carefully selected and harvested in 18 kg crates, then kept for 24 hours in a cold chamber to lower the temperature below 5ºC. This process enhances the extraction of aromas from the skins, and allows for a gentler fermentation.
The grapes are foot-trodden and fermented spontaneously with native yeasts at controlled temperatures below 23ºC. Gentle maceration, with daily batonnage, lasts for approximately 40 days.
After fermentation, the wine undergoes malolactic fermentation and is aged for 10 months in cement tanks.
