Vinification
Hand-harvested grapes are collected in small bins and transferred to a cold room (2–3°C ) to preserve freshness and primary fruit aromas.
Whole-cluster pressing is carried out under nitrogen to prevent oxidation. The must is settled naturally before fermentation in stainless steel tanks at low temperature. No malolactic fermentation is performed.
Following alcoholic fermentation, the wine remains on its fine lees for 2 months , followed by a minimum of 4 months of bottle aging prior to release.
