Vinification
Manually selected grapes are gently destemmed, cooled to 10°C, and macerated overnight before soft vacuum pressing and flotation clarification. Two-thirds ferment in stainless steel at 18°C and age on the lees until late February. One-third undergoes an 18-day fermentative maceration, followed by traditional pressing and barrel aging on the lees. Final blend: one-third barrel-aged and two-thirds stainless steel.
