Vinification

Manual selection of the grapes and delicate destemming; cooling of the crushed grapes via heat exchanger; resting in the press for two days; soft pressing via vacuum press; cleaning of the must via flotation; fermentation in stainless steel at a controlled temperature of 18°C. One-third undergoes fermentation on the skins in oak for the entire fermentation, then ages in a 7.5 hl cask. Aging on the lees until the end of February.
