Cantine Amato Grillo

Cantine Amato, Sicily, Italy

Made from Sicily’s native Grillo variety, grown on hillside vineyards at approximately 350 meters above sea level. The wine offers an expressive Mediterranean profile, with aromas of orange blossom (zagara), yellow grapefruit, citrus, and aromatic herbs. The palate is crisp, fresh, and savory, with refreshing acidity and a distinctive mineral finish.

Vinification

Protected from oxidation from harvest through bottling. The grapes are gently pressed, followed by rapid cooling and clarification of the must. Fermentation takes place in stainless-steel tanks at 10–12°C to preserve and enhance the varietal aromas. The wine matures in stainless steel for three months, followed by an additional three months of bottle aging.
