Saro Nero d’Avola

Dedicated to the winery’s founder, grandfather Saro, this Nero d’Avola offers an elegant expression of Sicily’s native variety. The vineyards are planted between 350 and 400 meters above sea level, bringing freshness and balance to the wine. The nose is expressive with aromas of ripe cherry and dried flowers layered with notes of leather, forest floor, and spice. Full-bodied, the palate remains graceful and vibrant, supported by velvety tannins.

Vinification

Fermentation takes place at 24–25°C, with 10–12 days of skin contact. Following gentle pressing, the wine undergoes spontaneous malolactic fermentation in stainless steel. It then matures partly in stainless-steel tanks (90%) and partly in oak barrels (10%) for a minimum of one year. After blending, the wine undergoes at least six additional months of bottle aging.
