Nocera Rose Pet Nat

A rosé Pét-Nat produced using the ancestral method. It displays a vibrant cherry-pink hue. Aromas of wild strawberry, red currant and flowers lead to a fresh, citrus-driven palate with a distinctive saline finish, reflecting vineyards located less than one kilometer from the sea.

Vinification

Whole clusters are gently pressed, with only the must extracted at low pressure. Fermentation begins in temperature controlled stainless-steel tanks and is paused by lowering the temperature once the desired residual sugar level is reached. The wine then matures on fine lees in stainless steel.

Without filtration or the addition of sugar or yeast, the wine is bottled and fermentation resumes naturally as the temperature rises. The wine is not disgorged, resulting in a naturally cloudy appearance with yeast sediment in the bottle.
