Sus Scrofa is the latin term for wild boar, and animal that makes its home in the hills of the Alta Penedès. It is also the emblem of Celler Pardas, as its image is depicted on many of the wines from the winery.

Sus Scrofa is Celler Pardas’ pure and vibrant expression of the local variety Sumoll; crafted from carefully selected vineyards in the Penedès and Anoia River basin. Farmed organically with minimal intervention, expressing the variety in its most honest form: fresh, lively and driven by pure fruit.

Vinification

50% Destemmed, 50% crushed, tanks fed by gravity.
50% whole-cluster. Spontaneously fermentation with wild yeasts in concrete tanks during 12 days at 22º. The wine is aged for 3 months in concrete tanks,

No finning agents used. The wine was neither clarified nor cold stabilized.
