Vinification

Manually selected grapes are gently destemmed, cooled, and macerated overnight before soft vacuum pressing and flotation clarification. Two-thirds ferment in stainless steel at 18°C and age on the lees until late February. One-third undergoes a 20-day maceration with indigenous yeasts in a 24-hl truncated-cone oak vat, followed by traditional pressing and aging in oak on the lees until late February. Final blend: one-third oak and two-thirds stainless steel.
