Rupestris comes from Latin and means “of the rocks” or “growing among rocks.” very fitting for this wine. It reflects the raw character of limestone soils and the ancestral spirit of the Penedès. Produced from traditional white varieties : Xarel·lo and Malvasia de Sitges, grown on shallow limestone slopes at Finca Can Comas. The wine expresses both tension and purity. A brief maturation in concrete tanks adds texture and finesse, resulting in a fresh, mineral-driven wine.

Vinification
Destemmed crushed and filled the tanks by gravity. Free-run must 55%. No industrial yeast used. Fermentation starts spontaneously in concrete tanks during 20 days at 17º. 45 days in tanks doing battonage every 10-15 days; later aged for 3 months in its lees in concrete tanks. No malolactic fermentation, no finning agents used.
